whitecurve

Ingredients

For the Kunefe:

  • 500g kadayif (shredded phyllo dough)
  • 200g unsalted cheese (akkawi or mozzarella)
  • 150g butter, melted
  • Crushed pistachios for garnish

For the Syrup:

  • 2 cups sugar
  • 1.5 cups water
  • 1 tablespoon lemon juice

Instructions

  1. Prepare Syrup: Combine sugar and water in a pot. Bring to boil, add lemon juice, and simmer for 15 minutes. Let it cool completely.
  2. Prepare Kadayif: Pull apart the kadayif to loosen the strands. Mix with melted butter until well coated.
  3. Assemble: In a round baking pan, spread half of the kadayif. Layer the cheese on top. Cover with remaining kadayif, pressing down gently.
  4. Bake: Bake at 180°C (350°F) for 30-40 minutes until golden brown.
  5. Add Syrup: While hot, pour the cold syrup over the kunefe. Let it absorb for a few minutes.
  6. Serve: Flip onto a serving plate, garnish with crushed pistachios. Serve immediately while hot and crispy.

Tips

The key is the temperature contrast - hot kunefe with cold syrup creates the perfect texture. Serve immediately for the best experience.
